feature: Modifications for mongo
requested to merge feature/events-chapter-practice-mongo into feature/milestone-events-practice-mongo
- configuration files are adjusted
- composer package updated
- updated dockerfile and docker-compose for mongo
- added openApi and asyncApi files
- created new migration to create student collection
